    “Blues Habanero Reserve” Hot Sauce Review

    I’ve been bragging about Blues BBQ Habanero Sauce for some time. Basically it is the perfect sauce to cook with..I am very pleased with all the dishes I have created with Blues Habanero Sauce, along with my fellow chef’s..Let me give you my uses for the sauce..

    Blues Hot Sauce

    INGREDIENTS: Lemon Juice, Fresh Red Savina(R) Habanero Peppers, Cider Vinegar, Tomatoes, Cayenne Pepper, Chile Pepper, Black Pepper, Sugar, Salt, Garlic and Xanthan Gum

    For starters the label is great! Any label with a gee-tar on it is cool!

    SMELL: The two definate smells are Habanero Pepper and Lemon…I won’t go any further saying spices and seasoning they are not pungent enough to smell. This goes for almost all sauces in general. Like a Fine Wine, people say they smell a hint of cherries…yeah right..no cherries in that wine. It just sound’s good…

    APPEARANCE: The color is deep red, that is a perfect red. There is a very minute visible evidence of black pepper and seeds.

    CONSISTENCY: Perfect. I’m not kidding. You don’t have to smack the bottom of the bottle. It pours out nice and smooth. It wont drip off the side when you bite into a sandwich etc…

    TASTE AND HEAT: This is not a full kick Habanero taste. More of a relaxed flavor, followed by lemon and vinegar….Relate this to when you eat raw oysters. You add sauce, lemon, maybe horseradish etc, but all you really need is a shot of Blues Habanero, and you are covered….I’ll give the heat a 6.95

    MY FINAL WORD

    Blues Habanero Reserve is a perfect all around sauce!! Especially on a Raw Bar in the summer. When you first taste it, you get the Red Savina (R)flavor that mellows out from the other ingredients. To say the least, I’ll give Blues Habanero Sauce as a pouring sauce an 8.75 on my scale, which is a very complex scale. As far as cooking with it, I’ll give it a SOLID
    10 !!!!…On a final note I am glad to pour this sauce on almost anything I eat. It has a very wealthy flavor!

    CHEF WES ZEBZDA

    Recipe:

    BLUES LINGUINI COZZE (mussels)
    2 dozen mussels
    6 cloves of garlic smashed and chopped
    1 eschalott chopped
    1/3 cup of olive oil…not xtra virgin that is toooo strong for this dish
    1/4 stick unsalted butter
    1 oz Blues Habanero Reserve
    1 pinch of sea salt
    3-4 twirls from a pepper mill
    3 sprigs of fresh tyme
    1/3 cup white wine

    In a saute pan..place oil on high heat…when hot, add garlic and
    eschlotts..turn heat to med…1 min later add white wine and then add the rest of the ingredients and cover for 3 min…..uncover and reduce liquid..
    This will be a liquid sauce (broth)…put linguini in a bowl
    surround it with mussels…..then pour the sauce over it…..top off with shaved parm….Now this is a meal….and mussels are cheap!!

      Good Morning everybody!

      Great review Chef Wes! I gotta tell ya folks, Wes sent me that same picture along with a couple of others along with his care package and I’ve been droolin’ ever since! No recipe, just the picture mind you! LOL! Now that I have the recipe I’ll surely have to actually try it instead of just staring at the picture. Hehehe!!

      Chef Wes, I love yur review style for the sauce man. A no nonsense approach to it that’s refreshing. I love the “smell” part. Cherries, LOL!! Sounds like an Awesome sauce to go with the mussels and i can think of lots of things I’d like to try it on just from the review. Thanks man!

      Hey Wes, glad you made the correction, I was gonna comment on that, was wondering if that was some new method…although parmesan crisps make a nice garnish!
