Hot Bald Peanuts

Ingredients:
* 2 1/2 pound of raw “green” peanuts (not the color green, but fresh raw peanuts which are called green peanuts)
* 1/2 cup salt
* 6 qts. water
* 2 cups chicken broth
Optional seasonings:
* Hot sauce, chile peppers, Old Bay Seasoning, shrimp boil mix …… whatever floats your boat.
Preparation:
1. Put water, salt, seasoning, peanuts in a large stockpot. Bring to a boil. Cover. Boil for 2 to 3 hours or longer (some boil their peanuts all day), until peanuts reach desired level of softness.
2. Drain. Eat up within a couple of days. Boiled peanuts don’t save as well as dry.

Boiled peanuts must be a thing of the South..they don’t have them up here. But whenever we go to Florida every store and gas station has ‘em..only ever tried it once…
Sandi you are missing out on one of the best “beer snacks” EVER! Don’t judge boiled p-nutz on the taste of the little store bought bags, or the “canned” crap.
There’s nothing like a fresh batch of boiled peanuts. DON’T FORGET TO REMOVE THEM FROM THE SHELL BEFORE EATING! LOL! I love making them, and so many times I’ve offered them to people who’ve never tried them, and they almost always just throw them into their gobhole shell and all.
Best way to have ‘em is while they’re still HOT, remove the shell one at a time, and enjoy. Over cooked ones are slimey and the nuts are usually shriveled up in the shell. In my opinion, when opening the warm shell, it should have just a slight soft snap, and the nuts should be semi-firm and have an almost buttery flavor. I usually add a good amount of dehydrated peppers near the end of cooking to add a nice bite of heat. I guess I should just do an article on my next batch to show you guys how I like to make ‘em. CaJohn makes some REALLY good boiled p-nuts. On my last visit to FMK a few years ago he and Sue brought a HUGE bag! If I remember correctly they added fatalli flakes to the process, and that made for a good slow burn.
