    Recipe: Meatloaf My Way

    Meatloaf My Way w/CaJohn’s Apple Smoked Bourbon Chipotle BBQ Crust

    3Lbs ground Elk (substitute ground sirloin or other super lean meat)
    1/2 pound bacon browned drained and chopped
    1/2 Lb chorizo
    1/2 C finely chopped red onion
    1/2 C finely chopped shallot
    1/2 C finely chopped red bell pepper
    1/2 C chopped mushrooms
    1 Tbs crushed garlic
    1/2 C grated mozzarella cheese
    1/2 C grated cheddar cheese
    1 4oz can sliced black olives
    2 slices dark rye bread cut into 1/4 ” cubes
    2 large eggs

    Preheat oven to 450. In a large heavy skillet brown chorizo (remove casings first) reserve rendered fat. Transfer chorizo to a large bowl (depending on the type of chorizo you may need to chop it up – the type I use is easy to crumble in the pan and should look almost like taco meat). In the skillet w/ the chorizo fat, add red onion, shallot, bell pepper and mushroom. Sautee until onions and peppers are translucent; add garlic and sautee for one minute more. Allow to cool a bit before adding all ingredients to large bowl.

    Mix together thoroughly with your hands. Press meatloaf mixture into a glass 9×13 casserole dish.

    Place in oven on center rack for approx 1 1/2 hrs or until internal temp reaches 160. Move casserole to top rack and broil for a few minutes watching closely, so that you brown the top but don’t burn it.

    Now the finishing touch is the BBQ sauce. Brush the top of the loaf generously with CaJohn’s Apple Smoked Bourbon BBQ Sauce. Place back on top rack of oven, again watching closely. After BBQ sauce has slightly caramelized, remove from oven.

    Oaxacan Corn

    2 C frozen sweet cut sweet corn
    1 Tbs finely chopped shallots
    1 Tbs finely chopped red onion
    1 Tbs finely chopped red bell pepper
    1 Tbs CaJohn’s Oaxacan
    2 Tbs butter

    For the corn:
    In a large skillet melt the butter. Sautee the onion shallot and peppers until translucent. Add the Oaxacan to the skillet and simmer for 1 minute. Add the corn to the skillet, stir and simmer until corn is hot.

    I hope you all enjoy this recipe as much as we do. I forgot that the BBQ sauce was slightly spicy. My son Hans (3 yrs old) took one bite and refused to eat it. So he had to survive on the mashed potatoes, brown gravy, salad, and bread that we served along with these delicious entrees.

    P.S. This is a meal that can feed the family, however for those of you that may not need this large of a feast the possibilities for the leftovers are endless… chopped into cubes as meatballs (meatcubes), meatloaf sandwiches, sliced breaded and fried (okay now I’ve lost my mind!)…

    Hey, also if you are just cooking for yourself put some fricken hot peppers into it, wussies! Just kiddin’!

      Sam, that’s a great looking recipe. Wish we had elk in my neck of the woods. :(

      I’ve been looking for crock pot recipes lately and found a couple for meatloaf. I think I may try yours in the crock pot using the ground sirloin instead of the elk. Just for :out:’s and giggles.:tu:

      I’ve made skillet corn quite a bit, but never thought about using hot sauce while cooking it. I usually add to it on the plate. Will have to try it this way using the Oaxacan. Sounds delicious.

      Hey Scott, I don’t get the unorthodox comment? It’s got all the basic essentials of meatloaf. Meat, bread, onions, bbq sauce(an accepted substitute for ketchup), and eggs.

      Just curious about why it appears unorthodox to ya, not criticizing your comment. :tu:

      Thank You for posting this. My family really loves meatloaf. Is that odd? Anyway would anyone like the recipe for the sequel with no equal? Fetucine W/CaJohn BBQ Cheese sauce and meat cubes. It was so good my wife made me make it 2 nights in a row.

      Scott, Dk only makes meatloaf with roadkill. I think that I remember him telling me once that Opossum meatloaf was is favorite, but any varmit would do as long as it wasn’t over a 2 day old hit and run.
