Multi-Review: Mild to Wild Pepper Co – Smokin’ Chipotle Sauce
By Buddah | August 27, 2008 |

Reviewer 1: XERO
Greetings all, Xero here. A couple of things didn’t go right for this review so there are no pictures. We bought a new digital camera with the money we got from Uncle George and were able to take some pictures of dinner. After dinner, the pics all got erased trying to transfer them to the computer. I guess I should have read the instructions.
This review is on the:
Mild to Wild Pepper and Herb Company’s
Smokin Chipotle Sauce
(aka “Warm Time in Indy”)
Price: $4.25

“My best selling spicy sauce. Not nearly as sweet as my Original Finishing Sauce, it has a rich flavor with just a hint of smokey heat from top shelf chipotle chiles.”
Ingredients: Vinegar, Brown Sugar, Chipotle Pepper, Tomato paste, Spices, Corn starch.
We have been pretty busy lately fixing up the house so my wife, Jennifer, took some boneless and skinless breasts and put them in the crock pot with the Smokin’ Chipotle Sauce and a beer. We love no hassle cooking.
A few hours later she shredded up the chicken, added more sauce and we had shredded chicken sandwiches with chips and macaroni salad. This sauce was just excellent. Chipotle has become a favorite in our house and the Chipotle flavor really stands out in this sauce.
Appearance- Out of the bottle it was nice and thick. A deep maroon, just the way it should be and just like the Habanero sauce.
Smell- bold and strong, and the Chipotle really stands out.
Out of the bottle taste- The Chipotle stands out well. Even though Vinegar is the first ingredient it isn’t overpowering. Sweet and smoky.
There were no Tastes of Opportunity this time because we used all the sauce on dinner. Like the Fiery Hot Habanero sauce, this is also some of the best BBQ sauce that I have had. I definitely will be ordering some and would highly recommend it to anyone.

The Smokin’ Chipotle Sauce is a very mild barbecue sauce, suitable for children
and people from Minnesota. Delicious on grilled sausage, hot dogs,
french fries, basically, on anything that you would consider using
ketchup, the Smokin’ Chipotle Sauce gives it just a little extra zip and flavor.

First let me start with the ingredient list, a peek at the label- Tomato Sauce (brown sugar, vinegar, tomato paste), Chipotle peppers, spices, corn starch. After opening and tasting the sauce a couple of things stand out, first this is a sweet sauce, really sweet. Second is the twang that comes from the vinegar, then there is the complex blend of seasonings accompanied by smokiness of the chipotles
with a slight burn at the back of your throat. The first impression I had was that this was a good sauce, but a little too sweet.
Now on to the food tests, the first thing I used this sauce on was BB ribs, grilled on a charcoal pit seasoned with a rub, cooked to perfection and then slathered with Mild to Wild Smokin’ Chipotle Sauce, placed back on the pit to char just a bit, and then removed and cut into edible size portions. The sauce was great added to the ribs this way, the flavors complemented the seasonings perfectly and was just sticky enough to make dining a paper towel event! After the success with the ribs I decided to try it on some chicken I prepared a few days later on a gas grill. The results were good but not as great as the ribs, may have been due to the seasoning being a different blend. I have tried the sauce on sausage, burgers, and even a Cornish hen, overall it did a good to great job on everything I used it on.
Now for the ratings, heat wise, I give this sauce a 2, on a 1-10 scale, the heat was there but subtle imo. Of course, it may seem hotter to someone not used to eating peppers on a regular basis.
Flavor, I award this sauce a 8 overall, it has a good blend of seasoning without any one element standing out, except the sweetness, and it is too sweet for my Louisiana trained taste buds, if the sweetness was brought down some I would give it a 9 or 10, but that is for another review
lol. If you are a fan of sweet, this is the sauce for you!
One more note, even with sweetness, this is my favorite commercial Chipotle bbq sauce, I don’t think you can go wrong with this one!

This is the easiest review I have had the pleasure of doing. Usually I have some negativity towards something about a certain product, but that is not the case here. I LOVE BBQ, so when Sandi and I received this bottle the only discussion we had was what to grill that night. Normally we would do what some refer to as a “Drunk Chicken” but recently we have found a better way of grilling birds.
Start by using a roasting bag. After prepping the bird, place in bag and load with your favorite veggies. My choices are brussel sprouts, carrots, cauliflower, and green onion. Then just place the bagged bird in a roasting pan and cook indirect for about 1 hour. After chicken is done than baste with sauce. The reason I am going into detail about the cooking process is because I didn’t get a chance to try the sauce on anything BUT the chicken. Why is that you ask? Because the review bottle was only 8oz, and we used it all on the chicken. Man oh man is this sauce GOOD! It is as good as ANY barbeque sauce you will ever have. If you don’t try it you will be missing out. TRUST ME!!!
This sauce is all that and then some. Perfect consistency, perfect balance of flavor and heat. I could go on ranting and raving about this one but I think you get the picture. This sauce ROCKS!!! Buy It-Try It-Love It. I know I sure did. Thanks Jim! Thanks Buddah!

Wow sounds great!
Great Review, I’ll have to try this one soon.
I love Jim’s Firey Hot!
I’m pretty sure we’ve tried this one. We bought a Mild to Wild bbq that was mild in heat. Whatever it was, was awesome. Great reviews gang.
Just FYI-since doing this review we did buy some more and I attemped to use as a jerky marinade. Well to be honest that was not such a great idea. The jerky was REALLY SWEET-too sweet for my liking but hey it was worth a try. Nothing works for everything. Next I think we will try sloppy joe’s or pulled pork sandwiches with it. Just thinking about it is making me HUNGRY!!!
Ed, is this what you used for The Source jerky?
Bill, The Source Jerky was unique in that it was nice and sweet tasting, hardly any extract flavor, but when The Source heat kicked in there was no flavor from there on out. Just amazing searing heat. Made for a really interesting combo. Painful, but interesting.
Great review guys! Jim served up this sauce with chicken nuggets in a crockpot last year at FMK. He told me as he was dumping the frozen nuggets into the slowcooker, “This is how I cook.” Then he poured the sauce in, turned it on and covered the lid and smiled at me as he turned and walked away. Nice.
oh, the nuggets were awesome!
Damn, I’m getting hungry!
Y’all are too kind!
Glad you liked it! Pretty much my best seller. Another trick is to put it on a grilled cheese sandwich after grilling- more of ‘my style’ of cooking
Not to revive bad memories, but it also makes a MEAN mac & cheese casserole
One of the best compliments I ever received was from Doug Renfro (Mrs Renfro’s Foods). He’s been a fan of it for years now, faithfully buying it everytime he sees me. He stated “you know, there’s a hundred sauces at this show but this is the only one I spend MY money on.”
Yikes!!! Just realized that that’s an OLD label you have pictured!
It’s now (and has been for awhile) simply called “Chipotle Sauce”. I happily agreed to change it after learning the name was protected. Didn’t want to be stealing another mans’ inventiveness
The same courtesy I’d expect to be shown if I were ever smart enough to come up with something original
This sauce must be great if Bill is gushing praises for it and Xero, who doesn’t like vinegar, had good things to say about it. Another great review Krewe. I’m looking forward to trying some of Jim’s stuff.
Jim, will you be a ZestFest?
Yes sir, I will be at Zest Fest. Big Dawg Salsa is splitting the booth with me since I don’t have salsa’s & he doesn’t really have many hot sauces. We’ll be directly across from Mrs Renfro’s
Just look for all the Fire Dept stuff.
Hey Jim, I just noticed that too!
I’m calling Chuck Evens!!
So….Chuck Evans’ MONTEZUMA Brand, formerly Sauces & Salsas, Ltd.
Company Appears to be
Out-of-Business
No he’s not…
Can’t see through the smog out there Parker?
btw Evans is the proper spelling if you are looking it up.
Hello John
Apparently he can’t spell; I copied it off his Nasty “Hall of Shame” web page.
The smog was a little heavy today though.
I just thoght that was funny, He posts that about all of the infadels that have gone by the wayside and that “Infringe” on his term’s “Smokin” and “Chipotle”.

Uh-oh
DOH!! Sorry Jim AND Chuck…Maybe I should’ve dubbed this as a retro review. Hopefully Chuck is cool with it the way it is. If not, I’ll change whatever is needed to comply.
On the trademark issue, after meeting Chuck a few weeks back, I now fully understand his position, and I do respect his stance. I’m not sure of the details of every individual situation that he’s delt with, nor is it any of my business, but small makers can learn ALOT by talking to Chuck about trademark issues. He’s had alot of experience with the subject, and has been willing to share his knowledge with others. Hell, he complimented Cape Fear on the use of “Smolderin’ Chipotle”, so he’s cool in my book.
This was a “Smokin” review.
Hope I don’t get sued, I ‘m outta work too and cannot afford it!
Hey, I have gotta be the largest collector of Chuck EvAns sauces and salsa’s.
I spoke to him at the 06 FF show and he’s HATE’S people who collect his stuff. He said “I’m not signing anything else for you, My stuff is made to be eaten.
Anyone look at the photo section of his web page?
There’s a big photo of many of us at the Sandia when everyone got along.
Well…..Most everyone.
Hehehehe
Jim, you still have the smokin’ label on your website.
What can I say Jim…….everyone said it all!!!
Very cool, I’m looking forward to meeting you both. See ya next week.
Chuck’s still very much in business and seemed to be a very nice guy from my short talk with him at CaJohn’s open house.
Do you guys have a sense of humor?
I was joking. I realize he is still in business.
He says “Company Appears to be Out-of-Business” about;
SCOTTY B’s HOT SAUCE
BYRDCLIFFE COOKERY,LLC
WILDLY DELICIOUS FINE FOODS
THREE HOT TAMALES, LLC

I know Chuck. I have probably the largest collection of his products signed by him, and a bunch of old Montezuma bottles that I bought from DK, which he had signed for me.
Chuck, if your reading this….I WAS JUST JOKING
Sheesh
You get a package yet?
I’ll see you next wek also, maybe this time we will have some time to chat and hang out.
That would be awesome to hang out again (hopefully more this time). I did get your package yesterday and was very surprised; I thought maybe it was a payoff so I wouldn’t blog anymore because of my absence lately.
loot. Thanks man. I’d say you’re a nice guy but don’t want to ruin your street cred. :DC:
I meant to write something up on that last night but got busy and my pee brain forgot to do it. That was a great package of
Baconater! Just got your package today- thanks!!
The pink & white shipping peanuts were a good touch!
Wife thought the snake bottle was just sick. And, *that’s* saying something from her
