    Recipe: Fat Kid Sauces Quesadillas

    Fat Kid Sauces QUESADILLA

    Ingredients:
    4 tortillas Tortilla, 94% Fat Free, Low Carbs TUMARO’S
    1/2 cup Mexican Cheese – Reduced Fat SARGENTO
    10 oz Chicken Breasts, boneless, skinless, DICED
    8 oz Fat Kid Sauces Black Bean and Corn Salsa HOT
    1 Jar Fat Kid Sauces Habanero Hot Sauce HOT
    Servings: 2.0

    Preparation:
    1. Brown Chicken in pan – in marinade\sauce of choice. I used Old El Paso Fajita Seasoning -but not the whole package.
    2. Warm up Quesadilla maker
    3. Place one Tortilla on bottom – Put on Salsa, Chicken and Cheese – Top with another tortilla

    4. Close lid for 3-4 minutes
    5. Allow to cool for about 1 minute, cut along scored lines with pizza cutter
    THAT’s IT! Apply FKS Habanero Hot Sauce for added heat, and ENJOY!!!!!

      Thanks Jodie…. these are now a staple in my house, we have them at least once a week. The Quesadilla maker was $20 at Macys – the best $20 I’ve spent in a while.

      I little note on the recipe, the picrures were from the first pass of the Quesadilla’s I made. Turns out that there was too much “stuff” in them, and the stuff oozed out the sides when heated. Plus the original tortillas I got were 10″ labelled “Whole Wheat – low carb” Torillas, but each on had 560mg of Sodium and 5g of fat. Thats 10g of Fat and 1120mg of salt just for the Tortillas!!!! I searched high and low and found MUCH healthir 8″ tortillas that I use now. I also cut back on what the pictures show with regards to the salsa, chicken and cheese used in side. This made the Quesadillas actually seal and stay together.

      Simple dish to make – about 15 minutes to prep and cook the chicken, and about 4 minutes in the Quesadilla maker!

      I don’t think we will be planting any time soon. The weather here is like a bad roller coaster ride. I hope it changes to somewhat normal soon. Just FYI, I put up a post in HWL about the name thing post 166. I hope it sinks in. Different strokes, ya know.

      NOt yet, you had mentioned that before…. I’ll have to try that.

      One note on the Quesadilla’s – I had them tonight again. Definitely try and get a 10″ Tortilla. It hangs over a bit, but the cheese wont run out. PLus I used a bit more than a 1/4 cup tonight :mrgreen:

      This is awesome, I have a review almost like this but I used ham, FK salsa goes awesome with it. When it’s all melted together it changes the flavor in a good way. :dtu:

      Quesadillas are a weekly snack in my house too, but I brown the chicken first, or use left over chicken, and then add some of my salsa and a little oriental sweet chile paste and let that heat up before putting it on the tortillas. The recipe for it and my Queso dip is on my website.

      I brown the chicken first as well (see preparation step 1)….. I just let the Quesadilla maker heat everything….
