    Recipe: Sam’s Naga Saurus Pizza

    Here is a recipe I came up with for the Naga Saurus (Sore Ass). The sauce was a gift to my son Zack from CaJohn. Zack was only able to make it half way through one piece of the pie.

    Sauce:
    1/3 C CaJohn’s Naga Saurus
    1/3 C tomato paste
    2 T fresh oregano finely chopped
    1 T rosemary finely chopped
    4 cloves garlic pressed
    1/4 t alder smoked sea salt

    This will produce a very herbaceous sauce. If you don’t care for a sauce bursting with fresh herb flavor, substitute 1 t of dried oregano powder for the fresh rosemary and oregano. If you cannot find smoked sea salt substitute plain sea salt (although the smoked stuff rocks).

    Crust:
    2 C all purpose flour
    1 T active dry yeast
    1 1/4 C water
    1 t sea salt

    beat until well mixed , cover and set aside in a warm place until it has doubled in size, about 20 minutes.

    Place 1 1/2 C flour and 4 T butter on a board, spoon the risen yeast mixture into the center of the flour and gradually combine until all of the flour is incorporated. Knead until smooth and elastic, about 5 minutes.

    Divide dough into two equal parts and place onto olive oiled pizza pans. Set dough aside in a warm draft free place until it has doubled in size again, about 40 minutes.

    Press dough out with hands to form pizza crust.

    This will produce a nice crisp thin crust if you press it out thin. You can also just buy a ready made crust.

    Toppings:
    sauce
    1 C cooked chopped bacon
    1 C smoked chicken
    1/4 C red onion sliced and coarsely chopped
    1/4 cup sliced black olives
    2 orange habanero peppers cut into rings (do not seed)
    1 C mozzarella cheese
    1 C sharp cheddar cheese

    I like to apply the toppings in this order because it allows the cheese to brown nicely on top of all the goodies.

    Preheat oven to 425, cook on middle rack until desired brownness about 25 minutes.

      Wow! That’s a nice rival pizza to my Famous Passow Pizza!! Very good choice on the alder smoked sea salt. If you ever get a chance, Danish Smoked Sea Salt is really amazing as well, but very potent so use less. Nice work, Sam!

      Is your crust really wet? I make homemade pizza all the time and my crust recipe is 3 cups of flour to 1.25 cups of water… I’d think a whole cup less of flour would be really wet. It does look great though.
