    Uncle Big’s Killer Wing Sauce

The first positive thing I noticed was the size of the bottle. 12oz and it only cost 10.00cad. I’m not sure exactly what that transfers to. I just threw everything I wanted into my cart and paid for it. But whatever the price is it was worth it. The label is a basic Uncle Big’s label with his intimidating face on the front of a white label. The sauce inside is a brick red color, and the perfect consistancy for a wing sauce. I rarely venture out when it comes to wing sauces because I have one that I really like, but the only problem I have with it is after its been refrigerated it gets thick and hard to pour from the bottle. That’s not the case with this sauce though, so it gets a point for that.
Here is what the side of the bottle has to say about the sauce.

“ Uncle Big’s Killer wing sauce is the hottest most flavorful wing sauce on the market today. Simply pour this sauce all over your cooked wings and enjoy. But be warned, after the intense flavors coarse over your tongue, the overwhelming heat will fill your mouth with waves of painful pleasure. Is it hot? Yes it most certainly is. Will it hurt? Oh, yes there will be pain! Chickens of the world beware this is going to hurt a lot!!!! Taste my pain!!!

Well it definitely sounds good. I got some fresh wings for the next day, but just can’t wait to try it. I bust it open and take a little sip. The peri peri peppers have a big influence on the taste of this sauce, but not so much that it does not taste like a wing sauce. (I tried using a peri peri sauce for wings and it don’t work. This sauce is actually close to what I was trying to accomplish when I did that.) The red savinas, cayenne and garlic are also strong in the overall flavor. It’s got a great tanginess from the vinegar that no wing sauce would be complete without. I’m going to go out on a limb and guess what one of the other unlisted seasonings in this sauce is. I might be wrong, but every time I make wings with this sauce I can’t help but think there’s celery salt in it.

The overall flavor is excellent, (it only got better when I actually heated it up and put it on wings) but unfortunately there was very little heat. Most people reading this will already know I’m an extract junkie, but let me clarify for anyone else. I am on the extreme end when it comes to hot sauce heat levels, and I bought this sauce because I have had Uncle Big’s Killer and Serial Killer sauces, and I know that his line of products tends to be extreme. That’s what I was hoping for and it didn’t deliver.

Up until this point I’ve been describing the flavor of this sauce when it was cold. When I actually heated it up and put it on my wings, there was one ingredient that lay dormant in the flavor of this sauce until it was heated up. I’m talking about natural butter granules, and they completely dominated my wings. Other than that, the flavor was the same. The buttery addition just tied everything together to create a sauce that really has to be tried in order to be fully appreciated. I ate as many as I could before throwing them into the refrigerator for leftovers the next day. Now I know that Wings aren’t really the best thing to heat up, but after soaking in the extra sauce all night they where even better than the day before. (Plus I added some Uncle Big’s Serial Killer to the mix, taking care of the heat level problem.)

0verall judgment: it didn’t become my new favorite wing sauce, but that’s a really hard task to accomplish. It is an excellent product, and well worth the price. The only negative for me was it could have been hotter, but I understand that not everyone is on the same level of heat tolerance as me, and Uncle Big has got to please the masses. The heat level on this one is comparable to the hottest store bought sauces out there, so don’t get me wrong, to a non chilehead…it’s hot. If you are on my extreme level of heat tolerance, just order a bottle of Serial Killer when you make your purchase and you’re all set. You can use any extract sauce to take it up a notch, but I highly recommend the Serial Killer. It’s almost like they where made for each other.

In closing, I’m not going to use a rating scale on this one I think I have covered everything well enough, and given it a good enough description that you don’t need to see it get a 10/10 to know that you should try it.
